Callie Heikes is a native Floridian born and raised in Fort Lauderdale and lived in Merritt Island, Florida until 2015. Callie earned her Master’s Degree from Florida Atlantic University and for the following 25 years worked in Sales and Marketing in the Medical field. Her father was a successful Realtor in Florida for over 50 years, so it seemed only natural for Callie to follow in his footsteps. She acquired her Florida Real Estate license in 2012. She successfully represented both buyers and sellers.
Since Callie was a child, she always loved to cook. One of her dreams was to be able to study Le Cordon Bleu in Paris. Because of her full time job, going to Paris was not an option, but she soon learned of Le Cordon Bleu Culinary College in Orlando, FL., an affiliate of the school in Paris. Callie attended the yearlong program five nights a week, after working her full time day job. She proudly graduated at the top of her class in 2013, accomplishing one of the hardest yet rewarding achievements in her life. Callie is now considered to be a Classically Trained French Chef. She jokes that she could have an anxiety attack if she were to run out of unsalted butter, thyme, shallots, white wine, and heavy cream, the essentials for making sauce.
Wanting to escape the Florida heat and experience the changing seasons, Callie and her longtime partner, Michelle, settled in the Asheville area. Recently married, Callie and Michelle enjoy Weaverville farm life on two plus acres with two dogs, two goats and four French hens.
